Rice paddle (shamoji)
A rice paddle may be wood or plastic. If wood, wet the paddle before sticking into the cooked rice to make it non-stick.
A plastic paddle may not be as non-stick as one might think. Trying to get it wet will only roll the water off the surface.
The paddle is useful when vinegarizing the rice. In order to help the rice vinegar penetrate into the rice, use the paddle in a cutting motion into the rice and pour the vinegar into the parted rice.
Substitute: large wooden spoon such as a mixing or salad spoon.
Warning: Do not to use a metal spoon on a non stick coated rice maker pot. Or any non stick coated surface. May cause micro particles to come loose into the food and ingested. Also, will ruin the cooking equipment by adding scratches.
