The sushi mat (makisu)

The sushi mat is used for rolling ingredients to make rolls. Click here to view makisu mat in use. Made of bamboo sticks held together with cotton string.

Sushi supplies substitute: Use a sheet of thick plastic such as a place mat. Though it will not have the lateral stiffness needed to pull the rolls tight. If you have not purchased a mat yet this might get you through but it is difficult to work with. Make sure the surface is clean by placing saran wrap on the working surface.

You may, with some skill, roll sushi without a mat and let the nori (seaweed) be the 'mat'. I have not tried this but have seen it done before with relative success. Be ready for a mess and loosly rolled rolls.
